It was delicious and enough to have it again today for dinner. A great recipe that is a huge success every time I cook it. We had it with a medley of vegetables and a Yorkshire pudding that had been made previously and put in the freezer. I have been asked for the recipe and how I get them to rise. The key is to ensure that the pan and the oil is hot prior to putting in the batter. Another great tip to ensure they rise is not to open the oven door until they are cooked about 20 minutes. The batter I make using:
70g plain flour
2 eggs
100ml milk
sunflower oil for cooking
Mix the ingredients together until they are lump free and pour into the pan. The batter is enough for 4 large or 12 small puddings. Hope that helps.
Enough for a couple of days. This is the one time I do cook the pastry blind to ensure that it is cooked as the meringue is cooked on a quite a low heat.
We didn't get to the beach as planned, the weather let us down a little but today is another day. Although a little windy and raining at the moment I am hopeful that this will pass. I have a pile of ironing that needs my attention and there is always a craft project to keep me busy. Have you any plans for today?

When our son comes at Christmas, he is in charge of the Yorkshires and his are Mile High ones! He says the secret is to beat lots of air in and as you said, a really hot oven/hot oil. What a lovely meal that looks - will look up that recipe as my husband LOVES ginger and that would go so well with the apricots too.

ReplyDeleteI thought yorkshire pudding was pudding, it's a bisquit? They look quite good. All your fixins look good, and lemon merinque pie refresing. Do you bake your pie with the meringue on top? I put mine under the broiler to brown the tips.

That meal looks quite delicious. I would love to cook that but my hubby is not that keen on pork and I have to be careful it doesn't trigger my gout. The yorkshire puddings love nice too. Glad your internet worked so you could see your children and grandchildren. I am luck that my daughter lives in Norwich but my son and his family moved to Huddersfield the week before lockdown. We do however skype with them. Keep safe.

Our Sunday was lovely with online church fellowship in the morning and time with family in the afternoon. Today I started early with two loads of washing and with the sunny weather and a breeze everything dried well. Hope you get an opportunity for a walk and some more times in your garden this week.
