Wet And Wild

I am glad to say that all is well here in our little cottage.  Storm Callum hit with a vengeance yesterday and through the night.  There was a 60 - 80 mph damaging wind making for a noisy night as it rattled and pounded against the stone walls.  There was an Amber warning for localised flooding in Stornoway and 27 of the 28 routes of ferry cancelled.  We have woke to a dreary and overcast morning but we have been rewarded with such a beautiful sky.




The girls have settled in well and have been out exploring their new environment.  Mickey goes down with us but isn't bothered about them at all, so we are thrilled. 



I have had some raspberries soaking in  a mix of distilled vinegar and white wine vinegar for a taste of Summer through the Winter months. (About 4 days)


It was bottled yesterday, along with some chilli oil.




Red cabbage was shredded and divided between the colander and slow cooker.  The cabbage in the colander salted and left overnight all ready to be rinsed off and packed in jars ready for the pickling vinegar.  The slow cooker cabbage cooked with pears and port all ready for braised read cabbage for the freezer.





As it is Communion weekend here in our little corner of the world I have been busy baking for the wonderful occasion and fellowship throughout the weekend.  A shoulder joint of pork in the slow cooker for pulled pork.  Mixed grain bread in the breadmaker.  A large pan of broth bubbling away on the stove top.  Quiches, all ready to be cut.  Mince pies with a crumble, nutty top and banana bread.





I am now going to make a fruit tart and a trifle to take for desert when we go to our friends and neighbours for lunch tomorrow.  A wet and wild few days that doesn't compare to the devastation occurring around the World.  We have a lot to be thankful for

  1. I wondered how you were getting on with the storm, so thank you for posting. A great time for hunkering down and doing some cooking and baking - and goodness have you been busy! Your little flock are looking good. Enjoy your weekend, sounds wonderful.

  2. Great post. How often do you have a communion weekend?

    On a less holy topic, I've never made raspberry vinegar although my Mother used to make it. Is it just a case of raspberries, vinegar and four days? What sort of proportions, please. Thanks in advance.

  5. We also got a bit of a battering and it's still blowing wild and chucking it down now. I think a dull, wet weekend calls for lots of baking and crochet practice :)

  7. You have made yourselves such a cozy sound spot in the world! There must have been something in the air yesterday as I too baked for the first time in months (it's been far too hot) - made a sweet soda bread and two poppyseed & cinnamon loaves. I am taking some with me for break during Gaelic class this morning and will take some into church tomorrow for Fellowship hour. We celebrated Communion last Sunday as it was World Communion Day - and for Canadians it was extra special in that it fell on Thanksgiving weekend. We are a fairly large congregation but I was surprised at how many stayed for Fellowship as so many were then rushing off for Thanksgiving Dinners with family. Enjoy yourselves tomorrow - and stay warm.

    I've made raspberry vinegar but not chili oil. I guess I've been scared by the warnings of garlic oil developing Botulism and I thought maybe chili peppers might also.

  18. I'm glad you made it through the storm! There's been another hurricane in Florida...not good. Thankful friends are safe there but much devastation for sure! Oh you are making me hungry with all your food! I need to make applesauce, most likely tomorrow as busy day for me today. We had communion Sunday last week! Always enjoy it. Have a blessed weekend!

  27. All your baking looks delicious! I remember having pickled red cabbage as a kid in England. I've never seen it cooked with pears. What will you do with the raspberry vinegar, use it to make salad dressing? Glad you are both safe and sound from the storm.
