We had a roast chicken dinner on Sunday with all the trimmings which included creamed leeks as a side. I didn't take any photos but rest assured it was good.
There was so much chicken leftover that I made a chicken/ham and leek pie and also a chicken stew with dumplings both of course using leek.
The sauce in the pie was cream based and topped with shortcrust pastry, definitely not a healthy option.
There was enough stew for two days with enormous dumpling that fluffed up once cooked, a real winter warmer. Perfect for the cold weather that we have had this week.
My fourth use of leek was a shepherds pie, an old favourite from our Army days. I haven't bought any minced lamb for awhile so was quite surprised at the price. We are considering this as a treat, you have to have a treat now and again.
I made them individually and topped them off with mustard mash to give them extra flavour.
They were good...
Finally, leek and potato soup that I make on a regular basis there is enough for today too. Another warming dish for these cooler days.

Love leeks particularly in soup. Your creamed leeks sound good. I usually have a surplus of green beans. They often end up in soups or stir fries. Have a good weekend. Barbara x
ReplyDeleteLeeks do add extra flavour to a dish. I particularly like the combination of chicken and leeks. With just two of us on most days to feed, unless the family are around, I find it's the cauliflower head that has to be used more than once and needs perking up with cheese sauce.

ReplyDeleteMy leftover veg...including part bags of frozen usually gets made up into a our elegantly named Garbage Broth. Leftover cooked veg is often made into a pie, a quiche or a frittata. Nothing goes to waste here.
I don't use cream as I don't like it very much but I do make a chicken pie with a roux based leek sauce which tastes very creamy once cooked in the pie.

I use leek and any left over bacon or ham in macaroni cheese (had this tonight) with a tiny bit of cayenne pepper on the top before it goes in the oven - yummy! I tend to make soup with any vegetables that are left or put them in a stew. ReplyDeleteYum, leeks. Last week I used all the leftover vegie bits and pieces in the fridge for a nice soup. I roasted them first then simmered in a little stock and pureed. Can't repeat it though because it's pot luck with what is in there.

This post is making me very hungry, especially that shepherd's pie, it looks so yummy. I tend to make cottage pie rather than shepherd's pie as lamb mince is more expensive and the family prefer beef to lamb, I'm quite happy with either. I'm a big fan of leeks too, I'd eat them more often if Mick liked them a bit more.

ReplyDeleteEverything looks so good. At this moment, late on Saturday afternoon, I have a large pot of this and that turning itself to soup on the stove. Leftover chicken, wilted celery, a few carrots and onion and garlic. I had soaked some beans, so they'll give it body.
